DEER PROCESSING
with or with out
the help of the hunter.

Hang Deer in Cooler - $10
Charged per deer if you don't process with us. This includes letting you hang your deer in our cooler till you are ready to process it yourself or by someone else.
Includes cutting legs off, skinning the deer, cutting the head off, cutting carcass in half and spraying it down.
Deer Processing (basic) - $75
Includes boning out your deer, cutting out what you want saved like boneless steaks (back strap steaks or hind quarter steaks) or bone-in steaks (shoulder steaks or round steaks), cut out bone-in rib racks, roasts, tenderloins, back straps, grinding left over meat and vacuum packing.
Includes getting your meat off the bone and putting it in a plastic bag. Nothing saved such as steaks, roasts, tenderloins or back straps. Does not include grinding meat.
Bring your venison in already boned out ready to be ground up. This includes grinding your meat and packaging.
NOTE: If you have something made and want ground meat there is only a $0.50 per/# charge on your ground meat.
Even if you don't have your deer processed at our shop, we will still make stuff out of your venison.

Summer Sausage - $2.80 per/#

Includes your help to make sausage by appointment. We usually mix venison 50/50 with pork. So how ever much venison you have, double that and that will be how much summer sausage you will make. We make summer sausage by hang drying it (not cooked). You take it home after it’s smoked and hang it in a place that doesn’t freeze and the temperature is no higher then 45 degrees. Then usually after about 4-6 weeks you take it down. This price includes added pork, casings, seasoning, cure, string, nails, grinding, stuffing and smoking.
Bratwurst (Original)- $1.85 per/#
(20# min order)
Includes added pork, seasoning, casings, grinding, stuffing and vacuum packing. We normally mix venison 50/50 with pork. So how ever much venison you have, double that and that will be how much bratwurst you will make.
Patties - $1.00 per/# (20# min order)
Includes grinding meat, making patties and packaging.
Dried Venison - $2.25 per/#
Includes curing, smoking, hanging, slicing and vacuum packing.

FOR ONLY $1.30 MORE PER POUND WE WILL COOK YOUR BRATS OVER A CHARCOAL BBQ PIT. THEN ALL YOU NEED TO DO IS PLACE THEM IN A ROASTER TO WARM THEM UP TO TEMPATURE AT YOUR EVENT.
WE HAVE A LIMITED SUPPLY OF ROASTERS FOR RENT IF YOU NEED ONE, RENTAL $5.

SUMMER SAUSAGE!
Summer Sausage is only made during the months of January - March. You get a group together and
make an appointment. Then you come in and help make your Summer Sausage. Your group will help cut up the provided meat, grind meat, mix meat, tie casings, tie strings, weigh your order and hang your finished sausage in the smoke house, leave the clean-up to us. I will smoke it for three days. Then you take it home after it’s smoked and hang it in a place that doesn’t freeze and the temperature is no higher then 45 degrees. Then usually after about 4-6 weeks you take it down. There is a minimum order of one batch. It cost $291.25 per batch. A batch makes 75 LBS. or 35 - 40 sticks of sausage. It takes about 1.5 hours to do one batch. The more people you bring the faster it goes.
